As for items from my pinterest page – I did write this out and put it on my fridge
It kept me out of the cupboards more than once!
Okay – I am totally lazy and without motivation…. I sit here on the couch writing this with an extremely yummy eggnog latte balancing on my knee! ( first off the season – do not judge!)
I need a change! I have some super cute clothes just waiting for me to skin down and slide into!! I need to focus on me a bit – any other able to relate?
So what does one do when faced with a challenge…. You turn to your pinterest boards! We all have one – dedicated to healthy recipes, weightloss tips, exercise regimes that are sure things, and silly motivation posters!
Take my challenge – turn those pins into realities! Try the diet, do the exercise, believe the posters!!!

Yummy…. I love finding recipes on Pinterest! I pinned a recipe for Sweet Potato Brownies a while ago and made them for the first time last week. We were having a graduation celebration for a bunch of our church youth. It was a great time and a bit emotional for some…. (me). We had a tea and dessert theme so I brought brownies!
Here is the original recipe – I made some changes (because of what I had on hand) and I really didnt measure so this proves that this is a very forgiving recipe!!

Gooey Sweet Potato Brownies
From Making Love in the Kitchen
3 ounces (or about one bar) unsweetened chocolate (*I uses semi sweet chocolate chips*)
1 tbsp coconut oil
½ cup sweet potato puree
3 tbsp raw honey
½ cup coconut sugar (*I used brown sugar*)
¼ cup cocoa powder
2 tsp vanilla extract
¾ cup apple sauce (*I only had a berry/apple sauce – so I used that!*)
¼ cup water
¾ cup brown rice flour (*I used regular brown flour*)
¾ tsp baking powder
½ tsp salt
Preheat the oven to 350 degrees F. Coat an 8×8-inch square pan with coconut oil and powder with flour.
Melt the chocolate and coconut oil over low heat.
Combine sweet potato, coconut sugar, honey, cocoa powder, vanilla and applesauce in the food processor. Add the chocolate/oil mix and combine until smooth – it should be creamy, not too dry. Mix in the flour, baking powder and sea salt and process again. Add water if needed for desired consistency.
Pour batter into the pan, smooth it out with a spatula and bake it for 35 – 40 minutes. Insert a toothpick to make sure they are cooked through; they should be firm when you press down.
Cool completely in the pan on a wire rack.
Ohhhhh Pinterest – anyone who reads this knows I love (an OBSESSED) with Pinterest! I love reading all the quotes – some make me laugh, make me cry and make me ponder. I have started pinning them HERE. Here are a few I like!
I have been totally MIA the last bit of the week BUT I have a great excuse! The weather has been AMAZING so I have spent very little time on the computer! It is another beautiful day today but it is still early so I thought I would do a quick post! I have continued on with my pinterest challenge this last week – most things having to do with the outdoors! I don’t have any personal pics (I will do another post with those included) but here are the pins I re-created!
It is my lovely daughters birthday party next month – so we used this picture as inspiration for her invites – it’s a pj/slumber party theme!
It was also MOTHERS DAY this past weekend (Happy Mothers Day everyone!) So I made my amazing mom some of these for part of her present! The funny thing is – I tricked her into collecting paint stir sticks from some local hardware store! Tee Hee!
AND we made a BEAN TEE PEE!! I am sooo excited for this one! Right now it looks kinda silly – like a big pile of boards piled up BUT once those little pole beans start to growing my kids will love to spend time in the garden munching on fresh beans!
I am going to do some sewing next – I have a craft fair next weekend and think I need some fresh stock!
What have you been doing from your pinterest boards?
For the third day of my pinterest challenge ~ I decided to try something from my “what am I going to do with all this hair” pinterest board! It is one of my favorite boards – I love my hair! 🙂
I chalked my hair a while ago and LOVED it!! But wanted to do something a bit more permanent. So I took a look at some pictures of computed ombré hair and looked at a few tutorials (like this one from thebeautydepartment) and went at it!! I used Ion Color Brilliance brights from Sally beauty supply – sky blue! Here is what it came out like:
I am really liking this challenge! Last night my daughter and I baked a super yummy “breakfast cake” that I found on pinterest – again off my “Yummy…” board.
My husband was heading out with a bunch of people for a day trip – so I thought that it would be nice to send them off with a yummy treat! Here is a link to the original recipe – I will post the recipe (with our changes) that we made here:
½ cup butter, room temperature
2 tsp. lemon zest or more — zest from 1 large lemon
7/8 cup* + 1 tablespoon sugar**
1 egg, room temperature
1 tsp. vanilla
2 cups flour
2 tsp. baking powder
1 tsp. salt
2 cups frozen raspberries
½ cup Vanilla soy milk
* 7/8 cup = 3/4 cup + 2 tablespoons
** This 1 tablespoon is for sprinkling on top
1. Preheat the oven to 350ºF. Cream butter with lemon zest and 7/8 cup of the sugar until light and fluffy.
2. Add the egg and vanilla and beat until combined. Meanwhile, toss the berries with ¼ cup of flour, then whisk together the remaining flour, baking powder and salt.
3. Add the flour mixture to the batter a little at a time, alternating with the milk. Add Berries.
4. Grease a 9-inch square baking pan (or something similar) with butter or coat with non-stick spray. Spread batter into pan. Sprinkle batter with remaining tablespoon of sugar. Bake for 35 minutes. Check with a toothpick for doneness. If necessary, return pan to oven for a couple of more minutes. (Note: Baking for as long as 10 minutes more might be necessary.) Let cool at least 15 minutes before serving.
It was soooo YUMMY!!!
