Summer Camp Crafts!

Wow! I cannot beleive it is that time again! Kids Camp started NEXT WEEK! I am so blessed to be in charge of the crafts for both camps this year. But I am also super stressed about picking the right crafts to do. There is such a age difference (7-12 boys and girls) so finding something that everyone will like can be a challenge.

I am thankful to have pinterest at my disposal and have found many ideas for my summer camp board BUT if anyone wants to shoot some ideas my way I would be very thankful!

Sweet Potato Brownies! Recipe Review!

Yummy…. I love finding recipes on Pinterest! I pinned a recipe for Sweet Potato Brownies a while ago and made them for the first time last week. We were having a graduation celebration for a bunch of our church youth. It was a great time and a bit emotional for some…. (me). We had a tea and dessert theme so I brought brownies!


  • Is it easy to make/prepare? Pretty simple, a few extra steps than normal.
  • How long does it take? A bit long – I had to boil the sweet potatoes then puree them and it took a bit longer to cook in my oven that stated on recipe.
  • Is it Kid friendly?Are brownies EVER NOT??
  • Are the ingredients easy to find? I didnt have some items in my cupboard – but I substituted and it was fine. It was very forgiving that way!
  • How does it Taste? AMAZING! Can’t wait to do it again! This is my new brownie recipe! No need for icing!

Here is the original recipe – I made some changes (because of what I had on hand) and I really didnt measure so this proves that this is a very forgiving recipe!!

Gooey Sweet Potato Brownies
From Making Love in the Kitchen

3 ounces (or about one bar) unsweetened chocolate (*I uses semi sweet chocolate chips*)
1 tbsp coconut oil
½ cup sweet potato puree
3 tbsp raw honey
½ cup coconut sugar (*I used brown sugar*)
¼ cup cocoa powder
2 tsp vanilla extract
¾ cup apple sauce (*I only had a berry/apple sauce – so I used that!*)
¼ cup water
¾ cup brown rice flour (*I used regular brown flour*)
¾ tsp baking powder
½ tsp salt

Preheat the oven to 350 degrees F. Coat an 8×8-inch square pan with coconut oil and powder with flour.

Melt the chocolate and coconut oil over low heat.

Combine sweet potato, coconut sugar, honey, cocoa powder, vanilla and applesauce in the food processor. Add the chocolate/oil mix and combine until smooth – it should be creamy, not too dry. Mix in the flour, baking powder and sea salt and process again. Add water if needed for desired consistency.

Pour batter into the pan, smooth it out with a spatula and bake it for 35 – 40 minutes. Insert a toothpick to make sure they are cooked through; they should be firm when you press down.

Cool completely in the pan on a wire rack.

Recipe review!

Ahhh I have been so busy with the end of the school year (in 2 days) coming up. There are soo many things to get wrapped up and settled. So computer time has been limited! BUT here is a review on a recipe I made last week!

 Here is what I thought about it!

  • Is it easy to make/prepare? – VERY easy and better yet – not a lot of dishes!
  • How long does it take? It took longer than the recipe stated… but it prob depends on what size you make it (I used a smaller dish) and your oven.
  • Is it Kid friendly? Well… my son wouldn’t try it, my daughter had a bit BUT WE LIKED IT!
  • Are the ingredients easy to find? Very easy – you can use whatever is in your fridge!
  • How does it Taste? Really good!

I would make this again!

Quiche with a Super Easy Whole-Wheat Crust

Yield: 5 – 6 Servings

Easy Whole-Wheat Pie Crust

  • 1.5 cups whole-wheat flour (I like King Arthur’s organic white whole-wheat flour)
  • 1/2 cup melted butter
  • 1/2 teaspoon salt
  • 2 tablespoons milk

In a 9-inch pie pan, combine all ingredients and mix with a fork. After mixing well, use your hand to form a ball in the pan and then press into pan. Bring it up on the sides and pinch the top (with your finger or a fork). Then mix and pour quiche filling right into the raw crust…..

Quiche Filling:

  • 1.5 cups 2% organic milk (you can also use cream or regular half & half, but we think it’s tasty with good ol’ milk)
  • 4 farmers’ market or organic eggs, beaten
  • S & P to taste
  • Dash cayenne pepper (optional)
  • We mixed bits of ham and cheddar into one half and then diced tomatoes and goat cheese into the other half after pouring it into the crust – it required a steady hand to get the pie pan into the oven without mixing up the two halves!

Whisk together all ingredients thoroughly and then pour into crust.

Bake at 375 for 30 – 40 minutes or until filling is set.


Real Food?

I have been reading through some of the 100 day Real Food challenge blog! I think we can do it! So my plan is to start replacing our food items with the healthier alternative. For example – white rice to brown rice, regular pasta to whole wheat, white flour to home milled whole wheat flour! I already use alot of the alternatives so it shouldnt be to crazy a change!

Luckily for me this blog has a lot of recipes for me to choose from! YaY! I do not have a great imagination when it comes to cooking! Here is a link to some great resources on her site =

Become a reality.

I have this vision or idea in my head of the life that I want to live, the food I want to eat and the impact I want to leave. I want to get back to the basics really.

With so many helpful sites and blogs I really have no excuse other than laziness! SO I am going to try to make some changes.. a little bit at a time.

When I look at our eating habits now and what I wish we were eating – I am so far off base! I want to get to a healthy, natural diet. No more packaged foods, no more preservatives and additives, no more carcinogens! It is amazing how many terrible things are in the foods we eat everyday. Even the foods that are “good” for us! I have briefly checked out this site and a few others and am going to spend some time reading over them. There is a change-a-coming!

 I want to become more self sufficient in many ways, one being with our garden, My mom is an amazing gardener and we have a constant supply of garden fresh veg during the summer. But that can only take us so far. We still have to buy the seeds from the store! I did some searching and found lots of instructions on harvesting our own seeds! BUT most seed (and produce) from the stores are hybrids and cannot be harvested! CRAZY! SO We have ALMOST finished our greenhouse construction (So exciting) and I have already started some seeds in peat pots (Heirloom Seeds)!

Anyways.. I will post about these things as they some – Wish me luck!
