Chocolate Easter Eggs!

My daughter and I decided to try and make out own Chocolate Easter Eggs!! We found a great recipe at 

First thing we did was gather our ingredients and get everything set up

 1/2 Cup soften butter

1 Tsp vanilla

1 (8oz) brick of cream cheese

2 Lbs of powder sugar

Add ins of choice (see note below)

3-5 Cups of dipping chocolate

*Add in ideas (quantities are per 1/4 recipe)

1 Cup peanut butter, coconuts, mini choc chips, chopped choc bars etc..

1 Tsp of rum, vanilla, maple extracts, or espresso powder

The first thing that we did was use the electric mixer to combine the butter, vanilla and cream cheese. Then we added the powdered sugar and mixed it with a spoon to make dough. I added it in parts because there is SO much!

Next we divided it into 4 equal parts and added in our flavour add ins. We chose peanut butter, pecan, willowcrips and left one plain. Then we refridgerated it for about 30 to 60 minutes so they were slightly firm. Next we shaped the dough to make eggs, the recipe says that it makes approx 4 dozen BUT I think that we made our eggs a lot smaller because we come out with 11 dozen eggs!!! Once all the eggs were formed we put them on wax paper and back into the fridge for an hour or two.

When the eggs were set we melted the dipping chocolate in a double boiler and dipped the eggs into the chocolate. This is were it got tricky! I found that the longer the eggs were out of the fridge the softer they got and they were very hard to dip with out falling apart! So keep most in the fridge and take them out as you go! It is best to use a couple of forks so you can drip off the excess chocolate. This job is best when only an adult is doing it. We placed the eggs on wax paper again and let them harden. We didn’t decorate our eggs BUT if you do you must put them back into the fridge for about 30-60 minutes before you decorate. IMPORTANT: Eggs must be kept in the fridge until they are ready to be eaten!!

So we ended up with over 130 eggs (would be more but we ate some as we were going!) and I figured they cost about $0.14 each, which all depends on what you put inside them! I would do this again for sure! They are sooooo good but VERY rich! The recipe also said you could do this for valentines, christmas and more, just change the shape!
